The dishes are prepared using exclusively products of the “short chain” , produced by us or products purchased directly from the agricultural producers of the area.

I TORTELLI MAREMMANI

Tortelli maremmani are the first dish of toscany origin, made from a fantastic egg pasta that encloses a fabulous filling of spinach and fresh ricotta cheese, typical of Tuscany.

THE BREAD SOUP

The soup of bread is made of stale bread and vegetables, a typical Tuscany dish, consumed most in Pistoia mountains and in Florence, too.

WILD BOAR STEW

The wild boar, or cinghiale is widely used in the cuisine of central Italy, where it is consumed in a variety of ways, with the tomato is really delicious.
It is of course, one of those dishes you can eat merely in the evening in winter, perhaps accompanied by a good glass of red wine.
